After School Cinnamon Apple Cake

Apple Batter
1 1/3 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup skim milk
1 egg
1/4 cup canola oil
1 teaspoon vanilla
1 1/2 cups finely chopped apples, peeled and cored

Streusel Topping
1/2 cup light brown sugar
1/4 cup flour
1 teaspoon cinnamon
3 tablespoons canola oil
1/3 cup chopped nuts

Preheat oven 400. Butter 8x8 baking dish.
Combine flour, sugar, baking powder and salt.
In a separate bowl mix milk, egg, oil and vanilla. Add to dry
ingredients and gently mix until just moistened. Stir in apples. Spoon half the batter into baking dish. Combine streusel topping ingredients in a small bowl. Sprinkle the half-filled pan with half the streusel then cover with remaining batter, top with remaining streusel. Bake 30 minutes or until toothpick
inserted in center comes out clean.
Cut into squares and serve warm.
